Puff Pastries Topped with Pears Caramelized with Maple Syrup, Bacon and Cheddar

Pears and cheddar cheese are a delicious combination. Treat your guests to these easy-to-prepare crisp and gourmet puff pastries that will have them asking for more!
- 225 g store-bought puff pastry, thawed
- 4 slices of bacon, cut into cubes
- 3 ripe pears
- 60 ml (¼ cup) maple syrup
- 250 ml (1 cup) extra sharp Biobio cheddar (aged 1, 2 or 3 years)
- Salt and pepper to taste
- Fresh thyme to taste for garnishing (optional)
With the rack in the middle position, preheat the oven to 375°F. Line a baking sheet with parchment paper. In a skillet, cook the bacon until slightly crispy. Set the bacon aside on a paper towel and leave a small amount of bacon fat in the skillet.
Cut the pears in half lengthwise, remove the core and cut the flesh into slices.
Cook the pears with the bacon fat over medium-high heat for 5 minutes. Salt and pepper, then add the maple syrup. Continue cooking for 5 minutes or until the liquid has almost evaporated. Set aside.
In the meantime, roll the dough into a 10 x 8-inch rectangle on a clean and floured surface. Cut the dough in 6 rectangles and place on the baking sheet.
Start by laying out the cheese on the pastry rectangles and then delicately pile slices of pear.
Put in oven and bake for 20 minutes. Remove from oven and sprinkle with bacon. Put back in oven for another 5 minutes or until the pastry is golden and crispy. Top off with fresh thyme, if desired.
